These stir fry teriyaki noodles are the kind of weeknight dinner I turn to again and again as a busy mom. They’re quick, flavourful, satisfying and easy to customize with any veggies or protein I have on hand. The whole recipe comes together in just 15 minutes, and is vegan-friendly and gluten-free friendly. These are a household favourite in my home along with these miso noodles and stir fry sesame noodles.

What makes this recipe extra special is the homemade teriyaki sauce. It’s simple to make but so much better than store-bought and tastes amazing with these noodles or can also be used as a sauce on other recipes like this Tofu Stir Fry.

Ingredients for Teriyaki Noodles.
  • Noodles: Use rice noodles, soba noodles or ramen noodles like I use for this Ramen Noodle Stir Fry.
  • Bok choy: I use baby bok choy for this recipe. I recommend to chop it up into small pieces to evenly distribute it in the stir fry. Bok choy is also delicious in these Yaki Udon Noodles!

How To Make Teriyaki Noodles

Step 1: Cook the noodles according to package directions. Set aside.

Step 2: Heat oil in a pot or skillet on medium heat, then add the bok choy and sauté for 3-4 minutes.

Step 4: Add the noodles and mix everything to combine.

How To Store

Let leftovers cool completely, then store in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave with a splash of water to loosen the noodles.

Jess’s Tips

  • Don’t overcook the noodles: They should be just tender. Rinse under cold water if they get sticky before adding them to the stir fry.
  • Taste and adjust the sauce: Start with 2 tbsp of tamari and add more if you want if it needs more salt. This may depend on the brand of tamari or soy sauce you use.
  • Customize: Feel free to customize with and veggies or mix-ins you love.
  • Serve right away: These noodles are best enjoyed fresh while warm and saucy.
  • Serve with sides: These teriyaki noodles would pair perfectly with a side of Asian Cucumber Salad, Veggie Steamed Dumplings or Orange Cauliflower.

You can prep the sauce and chop the vegetables and cook the noodles ahead of time, but for best texture, toss the stir fry together right before serving.

Noodles

  • 8oz rice noodles (can sub any noodles)
  • 1 tbsp vegetable oil
  • 2 green onions, chopped
  • 3 cups baby bok choy, rinse and chopped

Teriyaki Sauce


Instructions

  1. Start by cooking the noodles according to package directions
  2. Heat the oil in a large skillet on medium-high heat. Add the green onions and bok choy and saute for 3-4 minutes until the bok-choy is tender.
  3. Add the sauce and noodles to the pan, mixing everything together and letting cook for another 1-2 minutes. If the noodles start to stick to the pan, you can add a little splash of water. 
  4. Remove from heat and serve immediately. 

Notes

  • Don’t overcook the noodles, and rinse under cold water if they start to stick.
  • Start with 2 tbsp tamari and adjust to taste depending on the brand you use.
  • Add any extra veggies or proteins you love to make it your own.
  • These noodles are best served warm and saucy, right after cooking.
  • Store leftovers in the fridge up to 3 days. Reheat with a splash of water to loosen the noodles if needed.

    I love this recipe! Really does only take about 15 minutes total to make. It’s delicious, easy, and seriously makes me want to make four more batches to eat at once (but I’ll control myself..). Mine turned out almost identical to the picture. Highly recommend!
