Apple Pie Oatmeal has all the flavours you love in an apple pie now in your morning oats!
Ingredients

For the cinnamon apple topping (optional):
- 1/2 tbsp coconut oil
- 1 apple, peeled and cubed
- 1 tbsp maple syrup or brown sugar
- 1/2 tsp cinnamon
For the oatmeal:
- 1 apple, chopped (leave peel on if preferred)
- 1 cup almond milk (or milk of choice)
- 1 cup water
- 1-2 tbsp maple syrup (adjust to taste)
- 1 cup oats (rolled oats or quick oats)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
Instructions
- To make the cinnamon apple topping, heat the coconut oil in a small skillet over medium-high heat.
- Add the cubed apple, maple syrup, and cinnamon. Stir and cook for 2 minutes, then reduce heat to medium-low, cover, and cook for 8–10 minutes until tender. Remove from heat and set aside.
- To make the oatmeal, in a small pot, add the chopped apple, almond milk, water, and maple syrup.
- Bring to a gentle boil over medium-high heat and cook for 4–5 minutes until the apples begin to soften.
- Stir in the oats, cinnamon, nutmeg, and salt. Reduce heat to medium and cook for another 3–5 minutes, stirring occasionally, until the oatmeal reaches your desired consistency.
- Spoon into bowls, top with the cinnamon apple mixture, and enjoy warm.
Notes
- Use rolled or quick oats.
- Cook apples first so they soften.
- Stir often to prevent sticking.
- Adjust thickness with more liquid or extra cook time if needed.
- Add toppings like nuts, raisins, nut butter, or granola.
