These brownie batter overnight oats is filled with oats and chia seeds to keep you energized for whatever your day throws at you. I’m not kidding you when I say eating a cup of this is reminiscent of liking out a bowl of brownie batter until its clean. (Does anyone else do this when you make brownies?) Unfortunately, polishing off a bowl of brownie batter before they even make it into the oven is not so healthy for you. So I try to stick to this brownie batter overnight oats recipe when those cravings strike!

I like to serve these brownie batter overnight oats in a cup with fresh fruit, or pack it up in a mason jar layered with raspberries or bananas. If I serve it up for dessert than it’s great with a dollop of whipped coconut cream,and grated chocolate on top!

- 1/2 cup oats (quick or rolled)
- 2 tbps chia seeds
- 1/4 cup cocoa powder
- 2-4 medjool dates (depending how sweet you like it)
- 3/4 cup almond milk
- 1 tsp vanilla extract
- pinch of salt
- Melted dark chocolate
- Berries
- Coconut flakes
Instructions
- Add all the ingredients to a high-powered blender and blend until smooth. If you prefer a slightly chunkier texture just pulse a few times to slightly blend.
- Transfer to a jar or container with a lid and place in the fridge overnight, or for at least 4 hours.
- Serve with your favourite toppings

This is the first overnight oats recipe I really like!
I used the metric measurements, the cocoa with 60 grams seemed like too much, so I tried it with 30 grams and still had to add some dates as a sweetener, do you really use that much cocoa for just one portion?

It’s now the fourth time for me to make this recipe! It’s tasty, and keeping me full for approximately 5 h. With some thawed frozen berries it’s a perfect breakfast.
To be honest, I remember brownie batter differently, but it’s a nice attention getter – definitely worked for me😉
I personally use only 2/3 of the recommended cocoa amount, that is enough for my bowels. And I let everything soak overnight before blending, to go easy on my old food processor.

I’ve made this several times because it’s so good (seriously, it tastes like brownie batter). As an experiment today, I threw it all in the blender instead of letting the chia seeds soak for an hour. It came out exactly the same! So delicious and easy!
