If you love apple pie then this is the chia pudding for you! Apple season is here and there’s nothing I love more than cooking and baking with apples. Everything from healthy apple crisp, to healthy apple pie bars, and now apple pie chia pudding!
This is one of my favourite ways to enjoy chia pudding recipes in the Fall, especially after doing some apple picking. These jars are layered with creamy apple flavoured chia pudding and topped off with stewed maple cinnamon apples for a healthy chia pudding that tastes just like apple pie!
This chia pudding recipe is naturally vegan, gluten-free and refined sugar-free. Plus all the amazing nutrients found in apples. This recipe can be enjoyed for breakfast, as a snack or for dessert.

How to make cinnamon apple pie chia pudding
Step 1
Mix the chia pudding ingredients together in a bowl and place in the fridge to set for at least one hour, or overnight. Give it good whisks for 2 minutes to make sure everything is well incorporated. After an hour you’ll have a thick and creamy mixture like this!

Step 2
Sautee the apples in a pan with some coconut oil, maple syrup and cinnamon. You can cut the apples into small cubes, or leave them in larger slices if you prefer. You want to let them cook for a good 5-8 minutes until they’re soft and caramelized.

Step 3
Use a spoon and layer the chia pudding into the bottom of the jars, then add the apple layer on top. If you prefer you can also make this recipe in a glass or even just in a bowl.

Step 4
Enjoy these chia puddings right away, or store them in the fridge for up to a week covered. You can also store the chia pudding and apple compote separately to enjoy when you like.
Chia pudding ratio
The general ratio for chia pudding is 1 part chia seeds to 4 parts liquid. (So about 1/4 cup of chia seeds to 1 cup of liquid.)
Sometimes, depending on the liquid you use and the brand of chia seeds you have, you may need a touch more or less liquid. (This will also depend on your personal preference on how thick you like your chia pudding.)
If you use all coconut milk to make chia pudding, you may need a bit more since it is a thicker liquid.
Tips for making this recipe perfectly
- Use a mix of coconut milk and almond milk in this recipe. The coconut milk will add a rich and creamy texture to the chia pudding, and the almond milk will keep this chia pudding on the lighter side.
- You can use either homemade apple sauce or store-bought applesauce in this recipe. If using store-bought, go for unsweetened applesauce.
- Preheat the coconut oil in the pan before adding the apples so they can sautee in the oil for a minute or two. This will give them some great flavour!
- Give the apples a good 5-8 minutes to cook on medium heat so they can caramelize in the maple syrup. The apples should be pretty soft and easy to poke with a fork when they’re done.

Ingredients
Chia pudding
- 5 tbsp chia seeds
- 1/2 cup coconut milk
- 1/2 cup almond milk
- 1/3 cup unsweetened apple sauce
- 1 tbsp maple syrup
- 1 tsp vanilla extract
Satueed apples
- 1 tbsp coconut oil
- 2 apples, peeled and cut into cubes
- 2 tbsp maple syrup
- 1/2 tsp cinnamon
Instructions
- Whisk all the chia pudding ingredients togehter in a bowl. Place in the fridge to set for at least an hour or overnight.
- Heat the coconut oil in a pan on medium-high heat. Add the apples, maple syrup and cinnamon and mix everything together letting cook for 2 minutes.
- Reduce the heat to medium and let cook another 5-6 minutes, stiring often until the apples are soft, then remove from heat and let cool.
- Layer the chia pudding and apples in small jars or in a bowl and enjoy.

Hi Izzie, you can use either store bought or homemade almond milk! I prefer homemade almond milk (I use this recipe from the blog: https://28-gleamt2.store/how-to-make-almond-milk-at-home/%3C/a%3E%29 but when I don’t have time to make it I use store bought! My favourite brand is called Earth’s own Almond milk at the grocery store!
