Hello there heavenly coconut bliss balls. I mean, don’t these look like something angels would eat? These coconut bliss balls are packed with intense coconut taste, and have the texture of a creamy truffle. I like to roll them in extra shredded coconut because, well, more coconut!
I don’t know about you, but I LOVE coconut. In fact, some may say I have a coconut obsession. Yup. I’m in love with the coco.
I’m just saying, coconut is definitely a super-food if I’ve ever seen one! A coconut can be used to produce coconut water, coconut milk, coconut cream, and coconut ‘meat’. Lets break this down a little further and take a closer look at what each of these are.
Coconut water is the clear liquid inside of young coconuts, which is packed with electrolytes. (for those of you who enjoy an alcoholic drink or ten, coconut water is great for hangovers!)
Coconut milk has the same consistency as regular milk, and is make from boiling your shredded coconut meat in water. The liquid that is left is the milk! Coconut milk is a great dairy-free replacement for regular milk!
Coconut cream is essentially coconut milk, with less water. This creates a really nice thick and rich creamy texture. (I personally love to whip this stuff into heavenly coco-whip cream with my mixer!)
Lately, the coconut meat. This is literally just the actual coconut. The stuff you eat, and the stuff we’re going to use in this recipe.
So let’s get to it!
Place all your ingredients in a food processor and pulse until a smooth dough forms.
Your dough should be soft enough to mold with your hands, but not too mushy. (If it seems to dry, add a little more coconut oil. If it seems too wet, add a little more shredded coconut.)
Using your hands, roll into small balls, then roll into the extra coconut
Let set in the fridge for 2 hours.
Store in an air tight container in the fridge.

*If your having trouble rolling the dough, place in the fridge for 15-20 minutes to firm up a bit. This should make the balls easier to roll!
