  • Walnuts: walnuts are great to use in this recipe because they give the brownies a creamy texture and nutty flavor. Alternative nuts you can use are pecans, cashews or almonds.
  • Cocoa powder: Use a high quality cocoa powder for the best flavor. I like the ones from the brands Ghirardelli and Rodelle.

How To Make No Bake Chocolate Brownies

Step 1: Add the dates, walnuts, cocoa powder, salt and vanilla extract to a food processor.

Step 2: Blend until the mixture forms a sticky dough.

Step 3: Line an 8×8 inch pan with parchment paper and pour the mixture into the pan, pressing down evenly.

Step 4: Melt dark chocolate with coconut oil and pour onto the brownies, spreading evenly.

Step 5: Place in the fridge to set for at least an hours.

Step 6: Remove from the fridge and slice into squares.

How To Store

Store these no-bake vegan brownies in an airtight container in the fridge for up to 1 week. For longer storage, freeze them for up to 3 months. Just let them thaw at room temperature for 5-10 minutes before enjoying.

Jess’s Tips

  • Use Medjool dates: These will give you the best results since they are sticky and help the brownies bind together. Use any leftover dates to make a batch of Date Snickers.
  • Soak Your Dates If Needed: If your medjool dates are a bit old, they might be a little dry. To rehydrate them, soak them in warm water for 5 minutes, then drain and proceed with the recipe.
  • Blend thoroughly: Use a food processor to achieve a smooth, uniform mixture. Scrape down the sides as needed until you have a sticky “dough.”
  • Press firmly: When transferring the mixture to your pan, press it down firmly to ensure the brownies hold together.
  • Chill before slicing: Let the brownies chill in the fridge or freezer for at least an hour before cutting them for clean, sharp edges.
  • Make them into two bite brownies: use a mini muffin pan and add a spoonful of the brownie batter and top with chocolate.

These raw chocolate brownies are no-bake, delicious and packed with whole-food ingredients!


Ingredients

  • 2 cups raw unsalted walnuts
  • 2 cups packed pitted medjool dates
  • 1/3 cup walnuts (optional, if you want some walnut chunks)
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • pinch of salt

Instructions

  1. Line an 8×8-inch pan with parchment paper and set aside. (Alternatively, use a mini silicone muffin pan for two-bite brownies.)
  2. In a food processor, pulse the 2 cups of walnuts, medjool dates, cocoa powder, vanilla, and salt until a sticky dough forms. Scrape down the sides as needed. If using the optional 1/3 cup of walnuts for chunks, add them now and pulse just a few times to incorporate.
  3. Press the mixture firmly into the prepared pan, smoothing the top with your hands or a spatula. If using a mini muffin pan, press a spoonful of the mixture into each well and flatten the tops.
  4. Melt the dark chocolate with coconut oil in the microwave or over a double boiler until smooth. Pour the melted chocolate over the brownies and spread evenly.
  5. Place in the fridge or freezer for at least 1 hour to set.
  6. Remove from the pan and slice into squares (or pop out of the muffin pan). Store in the fridge for up to 1 week or in the freezer for up to 3 months.

  • Chill before slicing: Refrigerate or freeze for 30 minutes for cleaner cuts.

  • Make them into two bite brownies: use a silicone mini muffin pan instead of an 8×8 inch pan to make individual brownie bites.

    I used my Vitamix to make these because I don’t have a food processor. They are excellent. I made them into bite size using a mini muffin pan. I made the brownies per recipe then melted some Hu chocolate chips and added a little chocolate on top. My husband and I love them! Thanks for this easy and excellent recipe!!!!

    Those brownies are sooooo delicious !! I made them once just to try and my fiancé fell in love with the flavour and the quality of it ! He said those are the best brownies he has ever had in his entire life !
