Steel cut oats with maple fried bananas

Description
This bowl of steel cut oats with maple fried bananas is the perfect warming and cozy breakfast recipe!
Ingredients
oatmeal
- 1 1/2 cups water
- 1/2 cup steel cut oats (gluten-free if needed)
- 1/4 cup almond milk (or other plant-based milk)
- 1/4 tsp cinnamon
fried bananas
- 1 large banana (cut into quarters)
- 1 tbsp coconut oil
- 1 tbsp maple syrup
- pinch of salt
toppings
- 1 tbsp almond butter
- 1 tbsp chopped hazelnuts
- 2 tsp hemp seeds
- 1/4 tsp cinnamon
- 1 tsp maple syrup
Instructions
- Bring 1 1/2 cups of water to a boil in a pot. Add the oats, reduce heat to low and cover and let simmer for 12-15 minutes. (*May vary depending on your oats, check your packaging for directions)
- Remove from heat and stir in the almond milk and cinnamon.
- While the oats are cooking, heat the coconut oil in a small skillet on medium-high heat. Add the maple syrup and salt, and then place the bananas in the pan.
- Let cook on each side for 2-3 minutes, until caramelized and tender.
- Pour the oatmeal into a bowl and top with the maple fried bananas.
- Next add the almond butter, hazelnuts, hemp seeds, cinnamon, and maple syrup on top.
- Serve immediately.
