  • Strawberries: You can use fresh or frozen strawberries in this recipe. Fresh seasonal strawberries will taste best, and if you have extra you can make a batch of Strawberry Fruit Leather.
  • Milk: I like to use half coconut milk and half almond milk in this recipe for a creamy chia pudding that doesn’t taste too much like Coconut Chia Pudding. You can use any type of milk you like.

How To Make Strawberry Chia Pudding

Step 1: Add the strawberries, coconut milk, almond milk, maple syrup and vanilla extract to a blender.

Step 2: Blend until smooth.

Step 3: Add the strawberry milk to a mixing bowl or large jar with the chia seeds.

Step 4: Whisk the chia seeds and strawberry milk together.

Step 5: Cover and place it in the fridge for at least 2 hours to set, or overnight.

Recipe variations

  • Make it keto: If you want to make Keto Chia Pudding swap out the maple syrup for a sugar-free sweetener and use all full-fat coconut milk instead of almond milk.
  • Make it high protein: Add a scoop of your favourite protein powder or 1/4 cup of cottage cheese or Greek yogurt.
  • Use any berries: don’t have strawberries? You can turn this recipe in Raspberry Chia Pudding or Blueberry Chia Pudding by swapping out the berries.

How to store chia pudding

Store strawberry chia pudding in an airtight container or jar in the fridge for up to 4 days. Give it a stir before serving. It’s perfect for meal prep!

  • Use fresh ripe strawberries: The riper the berries, the sweeter and more flavourful the pudding. For another refreshing treat with fresh strawberries try these Strawberry Mango Popsicles.
  • Let frozen berries thaw: If using frozen strawberries, let them thaw completely before blending to avoid icy chunks.
  • Stir once while setting: Stir the mixture again about 5-10 minutes after mixing to prevent clumps.
  • Chill long enough: The chia seeds need time to gel. 2 hours minimum, but overnight is ideal.
  • Sweeten to taste: If your strawberries are more tart, add more maple syrup.
  • Add toppings: Try topping with strawberries, yogurt, or peanut butter granola.

Can I use frozen strawberries for Strawberry Chia Pudding?

Yes, however keep in mind that if the frozen strawberries are bland the chia pudding will be bland too.

How do I make the chia pudding thicker or thinner?

Add an extra tablespoon of chia seeds to thicken, or a splash of milk to thin it out.

  1. Add the strawberries, coconut milk, almond milk, maple syrup and vanilla extract to a blender and blend until smooth. (if using frozen strawberries, let them thaw before blending.)
  2. Add the strawberry milk to a large bowl with the chia seeds and whisk together until the mixture starts to thicken slightly.
  3. Cover the bowl and place in the fridge for at least 2 hours, or overnight.
  4. Serve as is or top with yogurt, fresh strawberries or your favourite toppings.
