Description
This Strawberry Chia Pudding takes 10 minutes to prepare and is packed with strawberry flavour!

- 1 cup sliced strawberries (fresh or frozen work)
- 1/2 cup coconut milk
- 1/2 cup almond milk
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 cup chia seeds
Instructions
- Add the strawberries, coconut milk, almond milk, maple syrup and vanilla extract to a blender and blend until smooth. (if using frozen strawberries, let them thaw before blending.)
- Add the strawberry milk to a large bowl with the chia seeds and whisk together until the mixture starts to thicken slightly.
- Cover the bowl and place in the fridge for at least 2 hours, or overnight.
- Serve as is or top with yogurt, fresh strawberries or your favourite toppings.
Notes
- Use fresh ripe strawberries for the best natural sweetness and flavour.
- Thaw frozen berries completely before blending.
- Stir the mixture after 5–10 minutes to prevent clumps.
- Chill for at least 2 hours or overnight until thick.
- Add more maple syrup if the berries are tart.
- Top with strawberries, yogurt, or peanut butter granola.
- Store in the fridge for up to 4 days.
