You’ll get your fix of protein, fiber, and whole grains for a well balanced breakfast. It took a bit of time but I’ve perfected this recipe, and these cookies are SO delicious! Even though they are a healthy breakfast cookie, as an Ultimate breakfast cookie they are not only healthy, but taste just like your eating dessert. Description

Ultimate breakfast cookies


Ingredients

  • 1 cup almonds
  • 1 1/2 cups oats
  • 1/2 cup flax meal
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup almond butter
  • 3 tbsp coconut oil, melted
  • 1/3 cup maple syrup
  • 2 tsp vanilla extract
  • 1 egg (or flax egg)
  • 1 cup mix: raisins, dried cherries, chocolate chips


Instructions

  1. Preheat the oven to 350 degrees.
  2. Line a cookie sheet with parchment paper.
  3. In a food processor, pulse your almonds until fine. Next add your oats and pulse together until fine.
  4. In a large bowl, add your almond/oat mixture with flax meal, cinnamon, baking soda, baking powder, and salt.
  5. In a separate bowl, mix together the almond butter, coconut oil, maple syrup, vanilla extract and egg until smooth.
  6. Add your wet ingredients to your dry ingredients and mix until combined.
  7. Mix in your dried fruits and chocolate chips.
  8. Form dough into round balls with your hand, and place on your baking sheet.
  9. Bake for 10-12 minutes, or until golden brown on top

    I brought these cookies on my son’s 4-day hockey tournament. I was (barely) sleeping on my brother’s couch and I honestly think it was these cookies that kept my energy up the entire weekend! Amazing!

    I am allergic to tree nuts, can  butter be substituted for the nut butter.
