How To Make Strawberry Cheesecake Popsicles

Step 1: Peel, wash and cut the stems off the strawberries, then add them to a blender.

Step 2: Blend until smooth.

Step 3: Pour some of the strawberry purée into a popsicle mold, alternating between the strawberry purée and yogurt mixture.

Step 4: Freeze for at least 4 hours or overnight.

  • Dairy-free: Swap the Greek yogurt for a thick dairy-free yogurt like coconut or almond yogurt.

How to Store

Once frozen solid, popsicles can be removed from the mould and transferred to a sealed container or freezer bag. Place parchment paper between layers if stacking. They’ll keep in the freezer for up to 1 month.

  • Get them out of the mould easily: Run the popsicle mould under warm water for 10–15 seconds to loosen the popsicles for easy removal.

Description

This easy recipe for Strawberry Cheesecake Popsicles are perfectly refreshing on a hot summer day!


Ingredients

  • 3 cups strawberries, stems removed and rinsed
  • 1 1/2 cups plain Greek yogurt
  • 1/3 cup full-fat coconut milk
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 1/4 cup graham cracker crumbs (I use gluten-free ones)

Instructions

  1. Add the strawberries to a blender and blend until smooth. 
  2. Mix together the yogurt, coconut milk, maple syrup and vanilla. 
  3. Use a spoon and add layers of the strawberry puree and yogurt to the popsicle mold. Use a large toothpick or knife to create some swirls for a marble effect. 
  4. Optionally add graham cracker crumbs to the bottom of each popsicle.
  5. Add the popsicle sticks to the mold and place in the freezer for a minimum of 4 hours or overnight. 
  6. Once frozen, run the mold under hot water for 10-30 seconds then gently tug on the popsicle sticks to remove them. 
  7. Optionally sprinkle the popsicles with additional graham cracker crumbs before serving.
